With crisp apples, juicy plums, and an earthy, vegetal edge, the nose pays homage to a variety of garden flavours. All while subtle notes of cinnamon and exotic fruits linger further afield, unfolding at the perfect moment and staying for a prime length. A composition of 80% Pinot Noir and 20% Chardonnay maintains exquisite balance, presented in luminescent yellow-gold with pearlescent sparkle. Pair with delicate canapés or revel in its flavour as a stand-alone aperitif. Our Prestige Brut Blanc is produced exclusively from the Cuvée and receives a low Dosage of only 6.5 grams, acting to help the aromas combine and shine at their highest. Comparable to a chef adding just the slightest pinch of salt. Usually, this blend consists of equal parts of two consecutive years to capture the house style while allowing for individual years to shine through. The wine is cleared by using gravity: we simply wait for all the suspended particles to float to the bottom of the enamelled steel tanks before transferring the wine into the bottles. Malolactic fermentation is allowed as it is a natural process to smooth out the expressive aromas. Prestige matures for up to 96 months in chalk caves under the hills of Champagne. The exact dates can be found on the back labels. They are released not based on time but on taste. We taste frequently and when they are just perfect, we release the Cuvée Prestige to market. You can find the exact production dates on the back label of each bottle. The format is DD/MM/YY Tirage: the date when the wine was laid to mature in the bottle after the first maturation in enamelled steel tanks. The first maturation typically takes a year. As we usually use two consecutive years in our creations, you can extrapolate from this date. If, for example Tirage is 2022, the harvests of 2020 and 2021 were combined in this bottle. Degorge: the date when the Champagne was disgorged and the Dosage added. The difference between Tirage and Degorge gives you the maturation time on the yeast. LOT: an officially registered number stating the date when the final inspection of the bottle was carried out and the labels put on. Its format differs from the other two dates as it needs to fit the official registration system. Its format is DDMMYYYY.
